Pad Kra prao.........

Ingredients:

                  
           1. Fish and Imitaition Abalone ( Other Meats.)
 
             2. Thai chilli, Chilli Padi, Brid's Eye Chilli, Bird Chilli or Prick Ki Hnu Suan in Thai Language. ( It tastes good than other chilli.) 

          *** If you like very spicy food. You can add chopped green peppercorn ( Med Prick Thai On ) to the mix ***

                *** But be careful it's spicy! Will make you cry. If you can't tolerate hot food don't this. Should sip on warm water or milk will help make spicy being mitigated. ***

 

             3. Small cloves garlic, thai garlic, kra taim thai ( Thai garlic hot flavour and a pungent aroma than Chinese garlic. )
 
             4. Red hot basil tastes good and aroma than withe hot basil.

               5. Soy Sauce + Black Salty Sauce or uses Black Sweet Sauce ( If you wont to make dark colored food. ) + Chinese Wine ( Add aroma to food. ) + Oyster Sauce + Pepper ( If you didn't eating spicy food, Do not use. ) + Seasoning ( Use instead stock. ) + Sugar + Fish Sauce + Oil. ( For Stir - Fried. ) For the amount of condiments depending on your preferences.

 

  

 

 

 

How To Make?

 

            1. Washing vegetables and fish.

  



                 2. Smash the garlic and chilli. For White basil divided up into two part, one fried and remaining use stir-fried.

 


                      3. Blanching fish by dip into the boiling water. When fish turns white opaque flesh should scoop out. While the outside be cooked slighty but the inside may still be raw. ( Use blanching instead of fried. It can help reduce cholesterol.)

 

             

            4. Put the basil leaves into the hot oil. Fried for about 1 minute, or until the leaves are crispy. ( Before pour oil into a pan. you should preheat a pan to dry. )

 




            5. Set the pan is hot again for Stir-Fried. Then waiting for the hot oil. ( There's a little smoke. Before adding garlic and chilli, Stir-Fried until fragrant, add the fish with imitation abalone or other meats depending on your prefernces.

 


            6. ( Supposed to use medium high heat for Stir-Fried ). Add sugar, fish sauce, soy sauce, chinese wine ,pepper , oyster sauce, stock ( No stock use seasoning + water instead ) and basil.
